Shiba Roti – Colourful Fusion Roti Prata Wraps in Bukit Timah Food Centre

Amongst the numerous rows of stalls selling hawker classics is the newly opened Shiba Roti. It’s hard to miss the youthful fusion stall with its adorable Shiba Inu logo on the glowing sign.

Shiba Roti was started by rising hawker entrepreneurs Leonard and Justin, who left their cushy 9-to-5 jobs to embrace the sweltering heat in Bukit Timah Market & Food Centre. Leonard shared with us that he used to be media research director before he ventured into the food scene.

This isn’t your standard Roti Prata counter set up that usually features kneaded dough, oils, and curry pots. Shiba Roti’s roti prata comes ready-made from a supplier, which Leonard heats up on the spot. He then scoops out fresh house-made ingredients from containers before adding a sprinkle of sesame seeds as a final touch.

Their menu features four types of signature wraps: Tandoori Chicken, Greek Lemon Chicken, Korean Hot Chicken + Kimchi, and Luncheon. Besides the mainstays, the stall also has a special wrap that changes daily.

We ordered the Korean Hot Chicken + Kimchi ($5.00) which is a popular hit among their customers, and I understood why. The flaky and doughy roti prata served as a perfect vehicle to hold the large amounts of gochujang-flavoured chicken chunks.

Although I wished the roti prata had a better crisp, the wrap made up for it with a refreshing crunch from the kimchi, fried sliced shallots, and fresh cilantro leaves. A creamy yoghurt sauce, which adds a tinge of tanginess, is drizzled on the toppings.

Next up is the Tandoori Chicken ($4.50). This rendition of the North Indian classic sees the chicken being seasoned with a blend of spices. The exterior of the chicken was a tad too powdery for my liking, and I thought it would have been better if more sauce was drizzled over. The wrap is topped with a medley of fresh vegetables for a satisfying balance of flavours.

Their Greek Lemon Chicken ($4.50) is a valiant attempt to bring together Greek food and local fare. The chicken was well marinated in a creamy yoghurt sauce, and had the same vegetable toppings.

For the vegetarians and vegans out there, fret not as there’s also a wrap for you! The Luncheon ($5.50) uses 100% plant-based Omnimeat. Apart from the plant-based luncheon being softer than your regular meat, it tasted almost identical to the meat-based luncheon meat that we are familiar with.

Lastly, we ordered the day’s special, which is the Laksa Chicken with Egg ($5.50). The laksa flavours were light but distinctive. I would almost liken this roti prata wrap to a curry puff… but better.

Overall, the roti prata wraps make pretty good quick fixes, especially for those who are on the go or looking for a yummy brekkie to start the day right.
