SHIOK SHIOK Noodles – Very Shiok XO Black Mee Sua & Mala Bak Chor Mee!

A huge fan of Mala? And Bak Chor Mee? Shiok Shiok Noodles’ got you covered. Besides their special Mala Bak Chor Mee, the Black Mee Sua Soup (now a rare find) is also a star on the menu.

Started by Chef Kelvin, who wanted to open his stall to continue Singapore’s dying culture for the next generation, Shiok Shiok Noodles was previously at a coffee shop in Sin Ming before moving to its current space in Teck Ghee Court Market and Food Centre.

A dish he learned from his grandmother, the Black Mee Sua Soup ($7, $8.50 with XO liquor) stole my heart. It made me reminisce the times when my grandmother made this dish for me. The mee sua was not too soft, and the broth was very robust, with the VSOP adding a nice fragrance. Hints of ginger were also present, which completed the dish. I did feel that my liver was just slightly overcooked, but there was a generous amount of liver, kidney and minced meat present.

The Mala Bak Chor Mee ($4.50 small, $5.50 large) made a fiery entrance. The fragrance of the mala spices caught my attention even before the bowl arrived. I love how the spice levels were not very mild, with a nice kick. While some mala dishes out there could be overly oily, that is not the case here.

I was pleasantly surprised with the generous portion of the regular Bak Chor Mee ($3.50 small, $4.50 large), even though I had the smaller size. The mee kia was consistently springy, and the house-made chilli was delicious.

Chef Kelvin also mentioned that he learned his Hong Zao Ji (Chicken with Red Glutinous Rice Wine) from his other grandmother, another dying dish that is very difficult to find. I’ll be sure to head back for that, which is only available on Friday and the weekends!
