Sing Lung HK Chee Cheong Fun – 4 Types of Chee Cheong Fun Made By Former Crystal Jade Dim Sum Chef

You’d think that after recently doing a chee cheong fun listicle, I’d be taking a long break from it. But fate has other plans in the form of a new chee cheong fun stall in the coffee shop right next to Golden Mile Food Centre. And the stall is helmed by a former Crystal Jade Executive Dim Sum Chef, no less!

The two-month-old stall is run by husband-and-wife team Kong Yiu Man and Chan Pik Yung. Chef Kong primarily does the cooking of the chee cheong fun while his wife takes orders and preps the two other available items on the menu – congee and glutinous rice. After spending over 40 years cutting his teeth at various hotels and teahouses apart from Crystal Jade, he decided to step out on his own with a dish that he had spent years perfecting – chee cheong fun.

There are four classic chee cheong fun variations to choose from – plain ($2.50), mushroom ($3.50), char siew ($4) and prawn ($4). For the plain version, you could either opt for no sauces or go all out with their three-sauce combo (we 100% recommend the latter though!) There are also two classic Hong Kong-style dishes, which are Century Egg Pork Porridge ($2.50) and HK Glutinous Rice ($2.80).

The Plain Chee Cheong Fun was anything but simple. Imagine a fusion between the Singaporean-style and Hong Kong-style chee cheong fun and viola! The slightly thick, chewy rice rolls were dressed in a hearty amount of savoury-sweet sauce, hoisin sauce, a peanut and sesame concoction, and a topping of sesame seeds.

I loved how the smoky sweet flavours of the sauces melded with the creaminess of the peanut and sesame mixture. The rice rolls, which are made using rice flour and potato starch, definitely went well with the sauce mix.

Many would be more familiar with the classic Char Siew Chee Cheong Fun that sees a heaping of rice rolls filled with lean bits of char siew. While they don’t have a sweet element, the char siew bits were full of natural, porky flavours that didn’t clash with the soy sauce base. The sauce also had a touch of sweetness.

I just wish the rice rolls were on the thinner side. Do let them sit in the sauce for awhile more, so they can soak up more of it.

While the morsels of crustaceans in the Prawn Chee Cheong Fun were of the frozen kind, they were plenty springy and made for a nice match with the sauce-soaked rice rolls (though I also would have liked them to be on the thinner side as well). For an extra oomph in flavour, don’t miss out on Chef Kong’s handmade hae bee hiam that gives your chee cheong fun a little spicy kick and a bit of a crunch.

Chee cheong fun might be the star here, but the Glutinous Rice was a surprisingly tasty choice that I’ll return for again. The sticky long-grains had an appetising mix of sweet and savoury flavours that were further amped up by shiitake mushrooms and lup cheong (Chinese sausage). It can come off as a tad dry but overall, everything was on point taste-wise.

My only regret was that I didn’t get to try the Century Egg Pork Porridge. Sing Lung HK Chee Cheong Fun was definitely a pleasant respite from the usual goods at Golden Mile Food Centre so I’d recommend giving them a go if you’re in the area!
