A signature of Yan Ting restaurant, the Prosperity ‘Yu Sheng’ with Norwegian Salmon is a classic of the freshest ingredients. Containing snow pear and a zest of passion fruit juice in the plum sauce dressing, it is a very refreshing appetizer.

Pique the appetite with savoury insulgences of a new combination – Fortune Barbeque Platter from the exclusive ala carte menu, featuring crispy suckling pig, roasted duck, barbequed pork and marinated jelly fish. The meats are cooked to perfection, an ideal appetizer for sharing.

I like the newly introduced crispy prosperty roll with scallops, banana and salted egg, a flavoursome six-colour roll including crunchy water chestnut, prawn and vegetables paste, black moss as well as banana, for a ting of sweet surprise. The beautifully presented and crusty combination deep-fried into a savoury-sweet burst of flavours will be a delight for adults and the young ones alike.

For me, the must-have timeless classic is the Chinese New Year Pun Choy. St Regis’s Pun Choy is a lavish dish of thirteen divine treasures including succulent premium abalones, dried oysters and sea cucumbers. Seafood ehtusiasts will rejoice with dishes like sauteed prawns and scallops in black bean sauce.

A bowl of carbo before dessert – Wok-fried glutinous rice with wind dried sausages. As I get older, I kinda know how to better appreciate lap cheong. It provides more bite and texture to the seasoned rice.

Last but not least, a cup of smooth and creamy avocado sago cream served with ice cream and crispy glutinous rice cake to end the night. Lunar New Year menus are available from 1 February to 5 March 2015, from $108++ per pax (minimum 2 guests).
