New Ala Carte Sunday Brunch at Hilton Singapore

Sunday Brunch affairs are always special. To make the best of these moments, Checkers Brasserie at Hilton Singapore has come up with a new à la carte concept for more time to share conversations, laughter and food.

While coming up with a new brunch idea, the Checkers Brasserie culinary team spent some time observing diners’ behaviors and noting their preferences. The conclusion: diners showed more interests in dishes that are prepared à la minute at the live cooking stations as compared to the food served in chafing dishes. As such, the team replaced the live stations with an extensive menu of à la carte dishes that can freshly prepared upon order.

Before I show you the à la carte dishes available, let me take you on a tour around the buffet area. Begin your brunch with some appetizer such as baked mushrooms, asparagus salad, roasted capsicum, crabmeat salad, marinated prawn salad, mussel salad, marinated leek, baked baby carrot, roasted pumpkin, roasted broccolini, baked vine tomato and baked eggplant.

There is also some roast items such as roast turkey with craberry sauce/gilbert sauce, roast ham with pineapple sauce and roast beef with natural jus. Not forgetting the charcuterie spread such as smoked marlin, smoked salmon, smoked escolar, pork liver terrine, foie gras de canard, air dried beef, honey ham. For seafood lovers, the oysters and lobster are not to be missed from the seafood on ice section.

Now here comes the 重点!One thing I love about Hilton’s sunday brunch is, you get a very very good variety of dishes. There is an excellent selection of gourmet bites and eggs specialties that you can order as many rounds of at your table. In this way, we can now spend more time mingling, less time picking from the buffet line and waste no time waiting at the usual live stations in buffets.

There are more than enough choices for both breakfast and lunch dishes. Going beyond the old-time egg favorites – scrambled, sunny side-up, over easy and Benedict – six egg specialties are introduced.

• Modern: Free range eggs cooked at 45°C, served with chanterelle mushroom gravy and crispy bread
• French: Poached eggs and foie gras laced with truffle hollandaise
• Italian: Poached eggs in Devil tomato sauce
• American: Sizzling eggs on a hot plate with double apple-wood smoked bacon
• Japanese: Slow cooked soft boiled egg with unagi (Japanese eel) and rice
• English: Eggs with Wagyu corned beef hash

I hope you are not too full from the buffet spread. If you can’t finish all the egg specialties, I would recommend you to order the french eggs, japanese eggs and modern eggs.

There are 8 different dishes to choose from in the Gourmet Bites section; each portion is slightly smaller than an entrée so that you can enjoy as many orders of Bites at the Brunch. UNLIMITED! ORDER AS MUCH AS YOU WANT!

• Wagyu Beef Tongue Burger with Coulommiers Cheese
• Foie Gras with Pork Char Siew Dim Sum
• Miso Marinated Salmon served with Soy Sprouts, Spinach and Wasabi Mayo
• Lamb Loin served with Baba Ghanoush and Mint Sauce
• Lobster served with Chili-flavored rice and Coriander
• Foie Gras Dumplings with Shimeji Mushrooms and Asparagus
• Braised Beef Cheeks in Red Wine served with Truffle Polenta, Bacon, Mushrooms and Onions
• Quiche with Lamb, Spinach and Sun-dried Tomatoes

I enjoyed the wagyu beef burger with a juicy meat patty combined with a tenderness that makes it very appealing. Beef cheeks is slow braised till softness. The tender meat marbled with collagen-rich fats is melt-in-the-mouth delicious with the gravy. The lamb loin is grilled to medium, it is tender but it can do with a stronger dose of spices. However, the pork char siew lacklustre and the lobster chili-flavored rice was too dry.

Most of the desserts are in the buffet section such as fruit tarts, macarons, cheesecakes. And there is also three variations of tiramisu which is nicely presented in small cups. You can also order crepes, pancakes and waffles which are prepare ala minute.

Sunday brunch is available from 12noon to 3pm. I suggest you can first order some Eggs Specialties and while waiting, explore the buffet. While enjoying the eggs and items from the buffet, order your Gourmet Bites. HAPPY EATING!
