Edge at Pan Pacific Singapore has launched a brand new Champagne Brunch experience which will be available on Sundays from 12pm to 4pm. For only $158++, enjoy a gastro‐tainment dining experience where food is prepared a la minute at seven different food theatres, complemented with unlimited Veuve Clicquot champagne, wines, beers and cocktails.
I had the pleasure to enjoy the four‐hour long Sunday Champagne brunch at Edge a few weeks back. It was surely a sensorial experience with a la minute presentations to enjoy and indulge in.

We started off with crustacean on ice – Boston lobster, 3 types of French and Canadian Oysters, prawns, clams etc. Then I moved on to my favourite Thai salad and tom yam where I can tell the staff the level of spiciness I prefer. I really enjoy their tom yam with seafood and chicken slices swimming in midly spicy Tom Yum broth. And not forgetting the Japanese section with sashimi and sushi.
I hope you are not full by now because that is just the beginning. As we walk around Edge, there is an egg station offering Poached Egg with Truffle Coulis. At the carvery section, there are prime rib, wagyu beef and suckling pig. I recommend that you try the suckling pig with very crispy skin and tender meat.
Seafood lovers will enjoy their feast-on-wheels with signature seafood and meats items such as Home Cured Salmon Gravlax and Crispy Kurobuta Pork Belly served at guests’ tables. There is even a ‘Live’ Grill section featuring Wagyu Beef and signature Pan Pacific Sausages grilled upon request. I would recommend the elegant presented duck confit ravioli made ala minute.
Being a Chinese, I very much still love my asian food. You must try their lightly marinated, nicely charred and juicy satays that are paired with a medium-bodied peanut sauce. And also the fresh crayfish cooked in sweet sauce.
Like bread? They have! Like cheese? They have a 2-metre cheeseboard with 30 varieties of artisanal Cheese and Raclette a la minute!
What got me really excited is their dessert station with an elaborate presentation of 20 desserts including Candy Crush Sponge Cake, Gluten‐Free Red Velvet Cake and Chocolate Brownie, all under the care of pastry chef Philip Lee. He was the one who reinvented the durian mooncake back in 2001, then he moved to Regent Hotel to make desserts at Basilico. Now, he is at Pan Pacific Hotel creating lovely desserts. On top of the range of gluten free cakes he has created, there are also waffles and ice cream. I feel like a happy girl in a candy store.
Parents looking to brunch leisurely, will be delighted to know that a dedicated Kids Corner comes complete with cartoons on DVD for the little ones.
Very impressive brunch at Edge! It is a unique brunch with a smorgasbord of sights, smells, sounds, tastes and textures of cuisines from around the Pacific Rim.
