The Sake Shabu Shabu ($208/$358 for 2/4pax) comes with assorted vegetables, Japanese Black Pork Belly/ Loin and choice of Japanese Thin Udon or Rice. To pair with the meal, we had fresh oyster for appetizers while waiting for the sake to get heated up. A whole bottle of Sake is used for the hotpot. Some clams are added into the sake broth to sweeten it.

After the sake reaches 80 degree celsius, vegetables were added. It has a little bittle aftertaste from the sake. But not to worry, as the sake boils longer, the alcohol from the sake will evaporate and it becomes sweeter.

When pork loin is cooked in sake, it helps to draw out and enhance the flavour of the pork. Each tender slice is infused with mild sake sweetness and tastes so good that I can’t stop eating.

If Sake Shabu Shabu is not your thing, there is also dashi stock. There are different sets for you to choose from:

– Kurobuta Shabu Shabu ($58/pax)

– A3 Joshu Gyu Shabu Shabu ($78/pax)

– A5 Saga Gyu Shabu Shabu ($108/pax) and

– Kani Shabu Shabu ($118/pax)

All these set come with an appetizer, dessert, assorted vegetables, meat and choice of rice or thin udon. If you are want something special, you can try the Soy Bean Shabu Shabu ($108/$188 for 2/4pax). We tried the dashi stock with A5 Grade Saga Beef. No complaints about the beef as it melts in the mouth with  beautiful marbling in umami flavour.

The finale of the sake hotpot is to pour the rice into the broth that has been infused with the essence of the cooked ingredients. An egg is crakced to thicken the porridge and lift the taste. The serving staff will be stirring the porridge until it reaches a thick consistency. The gooey porridge has got the essence from meat and vegetables combined with sweetness from the sake. Wrapping up the meal is the dessert of the day which includes mochi and ice cream to end the dinner perfectly.
