The St. Regis Singapore celebrates the 80th anniversary of the Bloody Mary cocktail this October. Perfected 80 years ago at The King Cole Bar at The St. Regis New York, the Bloody Mary has become on the most popular drinks in cocktail culture. We were invited to The St. Regis Bloody Mary Anniversary Brunch at Brasserie Les Saveurs, featuring a range of delectable dishes crafted to complement the Chilli Padi Mary, the local interpretation of the Bloody Mary.

The “Red Snapper” cocktail, now commonly known more as the Bloody Mary, was born in 1934 when St. Regis bartender Fernannd Petiot spiced up a tomato juice and vodka libation with celery salt, pepper, cayenne, lemon and worchestershire sauce. The original recipe is still served at The St. Regis New York, where it remains the most popular cocktail.

We begin our brunch at Astro Bar with a complimentary hour of aperitifs at 11am. As noon approaches, we proceed to the restaurant and enjoy the spread of indulgence from antipasto and cold-cuts to fresh seafood, selection of meat and poultry served ala minute. Let’s start with the seafood on ice. There’s North America lobsters, scallops, black mussels, langoustines, oysters, prawns poached in court bouillon, clams, crayfish and Sri Lankan crabs! I like the variety of blinis offered – lobster, scallop, smoked salmon. There are live stations pan frying foie gras and slicing Prime Rib of Grass Fed Beef as well.

Apart from the variety of freshly prepared canapés, specially crafted for the festival is a selection of Bloody Mary inspired dishes which include White Mary Liquid with Bloody Mary Sherbet and Vodka Celery Jellies and Tomato and Crabmeat Maki Roll with Bloody Mary Vinaigrette.

An addition to the spread of hot savouries during this celebration is the Poached Cod Fish with White Mary-Vodka Beurre Blanc, served with Sauteed Leek and Celery, and slow-dried cherry tomatoes. The white mary-vodka beurre blanc adds a lovely flavour to the cod fillet.

For sweet ending, indulge in the delightful dessert spread as well as the cherry tomato Mouuse with celery Seed-Chocolate Cream.

There are also mouthwatering parade of desserts to complete the meal. Our brunch became more enjoyable with live jazz singing as well.
