Ying Jie Seafood – Truffle Chilli Noodles & Fresh Seafood in Maxwell Food Centre!

Ying Jie Seafood is the embodiment of “Like Father, Like Son”, or “Like Mother, Like Daughter”, or both! Fuelled by her own love for seafood, the young chef who started Ying Jie Seafood was also inspired by her parents who were both in the seafood industry. The self-taught chef knows where to look for the best, and her seafood is fresh from the fish port directly.

Unlike the traditional Chinese seafood soups, Ying Jie Seafood’s take is more of a Western style. Cooked for 3.5 hours with fish and chicken bone, celery, tomato and onion, the soup is packed with flavour.

Born out of her love for truffle and chilli, the Seafood Truffle Chilli Noodle ($7.50) is a must-try. The truffle aroma was prominent, and bits of mala chilli could be seen. Not to fear though, as the chilli was not too overpowering. In fact, it complemented the truffle well. The noodles were cooked just the way I liked it — QQ and with a good bite. As much as the dish was enjoyable, I felt that the sauce was just a tad too much on the sweeter side.

Their best-selling Scallop Pao Fan ($7) is a hit for sure. Made with the same soup base, but with additional prawn stock, the soup was robust and tasted like a prawn bisque. I loved the generous portion, and how the crispy rice and eggy bits were served separately in a big spoon, preventing them from getting soggy quickly. The scallops were fresh, plump and cooked to the right texture, without being rubbery. My only gripe would be that the venus clams were on the smaller side.

For those looking for a simple meal, you cannot go wrong with their classic Fish Soup ($5). Filled with fresh fish slices (that did not have much of a fishiness), soft tofu and tomatoes, the dish was clean and light. Do not expect crazy strong flavours like that of the Pao Fan though. If you are one who always needs a side of carbs, they do have add-ons of Rice ($0.60), Thick Bee Hoon ($0.60) and Bee Hoon ($0.60) to go with your soups.
