When it was announced that hawker centre favourites like Golden Mile Food Centre and Zion Riverside Food Centre were undergoing renovations, many Singaporeans (myself included) were saddened that some of our go-to stalls will have to put a pause to their business. Thankfully, Fresh Taste Big Prawn Noodle is not quite ready to let you forget the taste of their hae mee just yet — they have opened a new eatery along South Bridge Road.

Also known as Zion Road Big Prawn Noodle and previously known as Noo Cheng Adam Road Big Prawn Mee, this eatery has a new concept that differs a bit from before. Not only will you find the Michelin Bib Gourmand-standard prawn noodles that we’re all so familiar with, but you can also look forward to the likes of lobster ramen, cold crab ($45/50) and a variety of side dishes.

After squeezing past customers making their orders at the counter to do my Safe-Entry check-in and temperature-taking (both were located at the front entrance near the door so it’s a bit inconvenient), I placed my orders. Soon, the Prawn Noodle ($10/16) arrived at my table, piping hot and emitting a fragrant aroma. I got the dry version, with a mix of yellow noodles and beehoon, which came with a side of soup. The noodles were crowned with a healthy amount of wild-caught sea prawns and crispy lard.

There was an ample amount of chilli sauce to coat my noodles sufficiently but I felt it wasn’t strong enough in terms of flavour. I was happy to see that the prawns were a bit bigger than what I was used to seeing at other prawn noodle places. Additionally, the crustaceans were nice and sweet.

I decided to splash out on the Lobster Ramen with Sliced Pork ($26) to get a taste of the broth that’s well-loved by many (and to check out the standard here). I definitely liked this more than the dry version of the prawn noodles. The soup was aromatic and robust with a hint of sweetness.

The ramen noodles were springy and, thankfully, didn’t turn too soggy even after being in the soup for some time. The pork slices were thin but nicely marinated, but the star of the show (other than the broth) had to be the massive lobster that came loaded with plump and juicy meat.

For a change of pace, I also ordered the Fried Fish Cakes, Tau Kwa and Tau Pok ($8) to snack on. Apart from dunking them into my lobster ramen soup, I found that eating them with the piquant chilli was the best way to go.

As an avid garlic lover, I enjoyed the Fragrant Pork with Crushed Garlic ($6). The pork belly slices were not too thick and went well with the generous amount of garlic and sweet sauce.

I can see the fresh takes here at Zion Road Big Prawn Noodle being popular, especially with those looking to slurp up warm bowls of prawn noodles in an air-conditioned haven. Even after the unit at Zion Riverside Food Centre reopens after renovations are complete, I’ll come back here when I’m in the area.
