Ah B Seafood White Bee Hoon – Where Smoky Wok Hei Noodles Meets Seafood Delight!

I’m lucky to have hawker buddies who always keep me in the loop about new stalls in town. One recent discovery is Ah B Seafood White Bee Hoon Stall, a fresh addition to the bustling scene at Golden Mile Food Centre.

37-year-old Chuen Yuen bade farewell to his junior chef position at the upscale Japanese restaurant, Sen of Japan, nestled in the iconic Marina Bay Sands in May. His aim? To embark on his hawker journey, side by side with his brother-in-law, offering seafood white bee hoon to eager foodies.

So, why the name Ah B? Well, that’s Chuen Yuen’s nickname that friends and loved ones use endearingly. Launched in June, this venture was different from his previous culinary stint, as he had never cooked seafood white bee hoon before. His skills were honed under the guidance of a friend who used to whip up delightful plates of seafood white bee hoon in Bukit Panjang.

Ah B Seafood White Bee Hoon Stall boasts a rather extensive menu which features eight delightful items. You can have the white bee hoon fried with an array of seafood, including sliced fish, prawns, squid, crayfish, and lala clams. Prices are wallet-friendly, starting from $6.50 for the sliced fish and lala white bee hoon, and up to $20 for the whole ensemble (minus the squid).

Here’s how the magic happens: the noodles are first stir-fried to perfection, imparting that delightful smoky flavour that we all adore. The gravy, a labor of love, is crafted by simmering chicken bones and anchovies. The smoky, wok-charred bee hoon, soaked in the rich broth, is a true delight.

We couldn’t resist the platter loaded with crayfish, prawns, and lala clams. The crayfish is sliced into half to absorb the essence of the broth, as well as to release that distinctive crustacean flavour into the soup. The tiger prawns, prepped with a quick fry in hua diao rice wine, deliver sweetness, crunch, and succulence in every bite.

Completing this hearty dish are Chinese cabbage, a generous helping of lala clams, and a satisfying layer of crispy pork crackling and garlic chips. Don’t miss out on their house-made chilli sauce which packs a tangy, fiery punch that’s incredibly satisfying.
