Oscar’s at Conrad Centennial Singapore is back with a new look, along with a whole new Sunday brunch offering that serves up an indulgent spread of international cuisines!

The Supercharged Sunday Brunch is available every Sunday from 12.30pm to 3.30pm at $98++ per person. In a compact setting, the buffet lines include seafood, carving stations and live cooking stations, along with a new 4-metre long salad bar for the health conscious eaters.

Diners can top up $20++ to enjoy unlimited sparkling wine, house wines and selected cocktails with their food. Alternatively, top up $60++ to enjoy free-flow Laurent-Perrier Brut, NV Champagne, house wines and selected cocktails.

I usually begin buffets from the seafood counter, and if you enjoy succulent oysters, you will not be disappointed. The seafood bar has four different types of freshly shucked oysters from France, Ireland and Canada, along with other items such as snow crab legs, Boston lobsters, sea prawns and Chilean half shell scallops. Needless to say, I went back for a few times for the oysters and the fresh and vibrant-coloured shellfish!

The seafood bar also serves fresh sashimi such as tuna, salmon, swordfish, hamachi and ika, and a small selection of nigiri and maki sushi.

Meanwhile, Conrad Centennial Singapore’s top chefs serve up their personal crab creation dishes that highlight the countries, culture and cuisines they represent. Two types of exciting crab creations are available each Sunday, including the Balinese-influenced live Indonesian crabs by Executive Chef David Laval.

Oscar’s also has its own version of the famous London Duck at the carving station. The ducks are specially imported from farms in Ireland, where they are reared with extremely high farming standards such as free-range rearing and grain feeds. What is served on our tables is a glistening roasted duck with succulent meat, and I felt so sinfully good to bite into the duck fats under the crispy skin.

Also served at the carving station are oven-roasted US prime ribs and an entire suckling pig prepared in slow-roasted Argentinian, Mauritian or Chinese-style. The preparation style rotates week to week.

Meanwhile, Oscar’s chefs work their magic at the various live stations. At the organic pasta station, diners can choose between two types of pasta or a risotto, prepared on the spot with a choice of homemade organic tomato sauce; coulis of piquillos, smoked paprika and small capers sauce; or Dijon mustard, sauteed mushroom and cream sauce. Cheese lovers can also have their pick here with a selection of eight cheeses.

Organic eggs are prepared in two different ways at a separate live station. I quite like the soft poached version (eggs Florentine) with cauliflower puree, sauteed spinach, foie gras and truffle oil espuma in a tall glass, where the different flavours come together to form a good combination. The eggs Benedict style is quite neatly done too.

Over at this counter, you can also request for pan-seared foie gras, served with Fleur de sel vanilla salt, apple and passion fruit.

Their oriental offerings are a feast to my eyes. I even spotted a very traditional dish – Pork Knuckles and Ginger Stew!

While you explore the buffet line, you will also notice the new salad bar with 30 toppings including organic chia seeds, gluten-free mung bean chips and Arame wild seaweed.

A wide range of superfood dishes are also served here. Ten small plates such as quinoa with fava beans, roasted pumpkin, fresh mint and grapefruit; Vietnamese salad of sous vide duck breast with fresh herbs, crushed peanuts and smoked Hoisin sauce; and roasted beetroot;and green apple slices with grapeseed oil and fresh sage are also served at the salad bar, along with 8 dressings such as blueberry, fresh green apple and vanilla bean, fresh tamarind and kumquat vinaigrette and Bragg organic apple cider.

If you want a change from your normal drinks, try their freshly made Healthy Blitz ranging from chia seeds, fresh berries, mangoes;strawberries, as well as health supplements like Whey protein.

While dining in air-conditioned comfort, don’t forget to head outdoors to the noodle bar. Being the only outdoor station, diners may miss out on the friendly chef whipping up local favourites such as Oscar’s Laksa, slow-cooked Beef Cheek Noodles, Fish Noodle Soup or Bak Choe Mee, made a la minute. Hats off to Chef for battling the high temperatures in our weather! My laksa had quail eggs, prawns and fishcake added to the thick vermicelli in thick and rich gravy sauce, which reminded me a little of the texture of satay beehoon gravy.

We wrap up our meal with liquid nitrogen ice cream. I always find it fascinating, time and again, as I watch the chefs stir vigorously in their pots in the nitrogen smoke and surprisingly, a lump of ice cream appears! The sweet potato and pineapple flavours I tried were of a very nice texture and were quite balanced in flavours.

There are other dessert items too for the sweet tooth, such as flambeed crepes suzette, homemade blueberry and maqui powder pancakes, waffles, blackforest cake, and tofu and green tea panna cotta. Not forgetting the chocolate fondue and waffles station at the other corner which does excellent waffles – crispy and fluffy, goes well with maple syrup and ice cream. Another must-try is their Flambéed Crepes Suzette with Grand Marnier or Cointreau and sugar syrup infused with geranium essential oil. Remember to quote “OscarsMTC” to enjoy the special promotion!
