Pin Sheng Chicken Rice – Boon Tong Kee’s Ex-Head Chef Opens Hawker Stall in Bukit Merah

Upon discovering Member of Parliament Melvin Yong’s Facebook post of Pin Sheng Chicken Rice, I have been itching to try it. And now that I’ve moved nearby, I jumped at the chance. I got there 30 minutes before the stall opened, and a fairly long queue of eager customers had already formed.

Established in December 2022, this hawker stall is owned by Mr. Liang who was an ex-head chef at the renowned Boon Tong Kee. He had been working there for more than 2 decades before deciding to fly solo. Now, he and his wife are dishing out some killer Hainanese chicken rice($4-$6) in Bukit Merah Hawker Centre.

Mr. Liang’s efficiency, a testament to his seasoned expertise, was evident as he expertly sliced the chicken consistency at a swift pace. Mr. Liang swears by using only the freshest ingredients, and relies on his gut feeling or experience when it comes to cooking of the chicken.

Pin Sheng Chicken Rice boasts an extensive menu featuring chicken rice ($4 to $6), curry chicken noodles ($5 to $6), char siew rice (S$4 to S$6), and various side dishes, such as braised egg and braised cabbage.

We opted for half a chicken, and relished the plump, tender meat that was bathed in a light, sweet-savory soya-based sauce. This was a fragrant plate of Hainanese chicken rice, but the chilli sauce and ginger were a tad watery during my visit.

The char siew also earned our approval. The pork, coated in a caramel glaze, was tender, and paired well with the crunchy braised cabbage.

Pin Sheng Chicken Rice is the real deal if you’re looking for a good plate of chicken rice in Bukit Merah. Just a tip, consider going during off-peak hours, as the lunchtime queue tends to be quite intense.
