My Chicken Castle – Ex- SBS Bus Driver Sells Homey Malaysian Fried Chicken in a Queen Street Coffee Shop

Sinking your teeth into a juicy crispy piece of fried chicken is always joyous. And there’s one stall in a coffee shop on Queen Street that hopes to share its love for fried poultry with everyone.

Helmed by Bryan, a former SBS Transit Bus Driver, and his business partner Kok Jiunn, My Chicken Castle has been serving freshly-fried chicken since they first opened their doors in October.

Ipoh-born Bryan shared that he was inspired by the chicken from Winner’s Fried Chicken, a popular Malaysian chain brand. Missing home, he visited the brand’s Singapore outlet at Bukit Merah and was inspired to create his own. The stars were aligned when he found a vacant stall in 3838 Eating Place at Queen Street and moved in.

Bryan shared that it took him roughly four months of research and development before finalising his recipe.

When I arrived, Bryan was making his first batch of chicken. He makes his secret flour mixture, with ten different spices, every morning. He double coats each chicken part and deep fries it till it’s golden brown.

On the menu, there are four different cuts of chicken — wing ($1.80), breast ($2.50), drumstick ($3) and thigh ($3). The stall also has two-piece to five-piece meals.

I got my hands on the 3 PC Meal ($6.50) which has a chicken wing, breast, and thigh. The wing was crispy and moist, and evenly coated with a fragrant seasoning. I was surprised that the breast was juicy and tender, as it would usually be quite tough! The thigh had a good fat-to-meat ratio, succulent meat, and crunchy skin. You can opt for drumstick instead of thigh in this set.

I added Crinkle Cut Fries ($1), which were flash fried and hand-tossed with salt, to the meal. Fries are always a good idea, but their version was a tad salty.

I wanted to order the stall’s popular Fried Chicken Skin, but it’s only available in the late afternoon. Nevertheless, the fried chicken was addictive enough to warrant a return trip!
