Circuit Road Hawker Centre is usually one of those that comes alive come evening, which explains why many stalls are closed during the day. Don Don Prawn Noodles is one of the few stalls that open midday to ensure that hungry folks stopping by during lunchtime will leave satisfied. The stall stays open till 8pm to serve the dinner crowd.

Set up just before the COVID-19 era roughly three years ago (has it been that long since this new normal?), the hardy stall has braved and overcome the challenges the pandemic brought. All ingredients are bought fresh from the market and everything from their chilli sauce to shallots are made and fried in-house.

Keep things simple with their standard Prawn Noodles ($4.50/5.50) or jazz your noods up with the Pork Rib Jumbo Prawn Noodles ($9.80) and Pig Tail Prawn Noodles ($5.50/6.50). They also sell homemade Archa ($4/8) on the side to give your prawn noodles even more of a palatable oomph.

The most expensive and impressive item on their menu is the Jumbo Prawn Noodles ($11.80) that comes with two large Ang Kar prawns, greens, fish cake slices, pork lard pieces and a healthy sprinkling of fried shallots. I opted for the soup version and a mix of yellow noodles and thin bee hoon for my carbs, as well as an added option of pig intestines for $2. All together a little pricey, so let’s see if it’s well worth every penny.

Having been simmered for an estimated three hours with a slew of ingredients that include carrots and white onion, the broth was robust yet not overwhelmingly so. You can clearly taste the umami and slight sweetness from the prawns used in the stock which delivers a warmth that seeps into your body.

The hulking crustaceans were conveniently de-shelled but their heads were still left on so that gave it additional points for presentation. The meat was rather firm, sweet, and clean-tasting.

A good amount of care was given to the pig intestines when it comes to both cleaning and cooking it, resulting in a pleasant chewiness and soft centre.

I had the dry Pork Rib Prawn Noodles ($5.50/6.50) too. The chilli concoction that the noods came tossed in was made in-house using a medley of vegetables to make it more fragrant. It also delivered a sharp hit of spiciness that got an instant approval from the spice lover in me.

The pork ribs had been marinated for about four hours in a special mix that includes two to three types of wine, before they are slow-cooked. The end result? Super-duper tender meat that was easy to tear apart and perfumed with the wines’ aroma and medley of spices. Although smaller than the Ang Kar prawns, these were still fresh and sweet.

The soup on the side was similar to that in the soup version of the prawn noodles.

Don Don Prawn Noodles definitely deserves more credit for their fresh ingredients and flavours; perhaps the slightly higher price points are a bit daunting to some but they do serve up yummy bowls of noodles so it’s worth a go!
